Mexican rice

INGREDIENTS:
  • 3 tablespoons neutral oil
  • 2 cups long-grain rice
  • 4 garlic cloves
  • 1 medium onion
  • 2 large tomatoes
  • 1 quart chicken stock
DIRECTIONS:
  1. Saute rice in oil until brown.
  2. Blend garlic, onion, and tomatoes in food processor.
  3. Add chicken stock and blended mixture to the rice, bring to boil, and then simmer until rice is cooked.
